Current Vintage 2019 Vinification Details Careful selection of the best grapes after a mechanical harvest at night to avoid oxidation and preserve the maximum fruit expression. After destemming, the harvest undergoes cold pre-fermentation maceration at 10°C. The fermentation then takes place at 23°C.
